I'm expecting Good Eats: Once and Future Fish to be a very informative episode due to the fact that sustainable seafood is a big issue for Alton Brown. Recipes for the show are already listed on Food Network's site if you want to get a jump on what AB will be making. There's also a link to the Sunburst Trout Company on Alton's own website, so I assume he worked with them on this episode.
